For the Filling
  • 8 slices Bacon Adds savory crunch and protein; substitute with sausage or ham for other flavor profiles.
  • 4 cups Potatoes, cubed Provide structure and heartiness; use frozen diced potatoes for convenience.
  • 8 large Eggs, well beaten The main source of protein; essential for a hearty filling.
  • 1/2 cup Monterey Jack Cheese, shredded Adds creaminess and richness; cheddar or pepper jack can be used for a different flavor.
  • 2 1/2 tbsp Taco Seasoning Enhances flavor in potatoes; use homemade or store-bought for convenience.
For the Tortillas
  • 8 6-inch Corn Tortillas Serve as the base; swap for flour tortillas for a softer texture.
For Cooking
  • 1 tbsp Canola Oil Used for sautéing potatoes; any neutral oil can work well.

Equipment

  • Oven
  • Skillet
  • Baking Dish

Method

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Gather your ingredients and prepare the baking dish.
  2. Place the bacon in a cold baking sheet and slide it into the oven. Bake for about 10 minutes, until sizzling and golden brown. Chop into small pieces and set aside.
  3. In a large skillet, heat a splash of canola oil over medium heat. Add the cubed potatoes and taco seasoning. Sauté for approximately 15-20 minutes, stirring occasionally.
  4. Warm the corn tortillas in a dry skillet or in the microwave for about 10-15 seconds. Stand them upright in a baking dish.
  5. Scramble the beaten eggs in a medium skillet over medium heat until just set but still slightly soft (about 3-4 minutes). Remove from heat.
  6. Fill each tortilla with about 1/4 cup of sautéed potatoes, followed by scrambled eggs, chopped bacon, and a tablespoon of shredded cheese.
  7. Bake the assembled tacos in the preheated oven for about 10 minutes, until cheese is melted and edges are crispy.
  8. Remove from the oven and let cool slightly. Serve warm, optionally with toppings like pico de gallo or avocado.
