  • 1 tablespoon Olive Oil extra virgin for best flavor
For the Topping
  • 1/2 cup Mayonnaise opt for full-fat mayo
  • 1/2 cup Parmesan Cheese or Pecorino Romano for sharper flavor
  • 2 tablespoons Fresh Parsley chopped
  • 1 tablespoon Fresh Dill or tarragon, optional
  • 1 teaspoon Lemon Zest lime zest can be substituted
  • 1 teaspoon Garlic Powder can substitute with minced garlic

Method
 

Cooking Instructions
  1. Preheat your oven to 375°F (190°C) and pat the salmon fillets dry with a paper towel.
  2. Drizzle each fillet with olive oil and season generously with salt and black pepper.
  3. Allow the salmon to rest for about 5 minutes.
  4. In a bowl, combine mayonnaise, Parmesan cheese, parsley, dill, lemon zest, and garlic powder. Mix until smooth.
  5. Spread the topping evenly over each salmon fillet.
  6. Place salmon on a baking sheet and bake for 12-15 minutes or until crust is golden and salmon flakes easily.
  7. Let the salmon rest for about 3 minutes, then garnish with parsley and lemon before serving.
