For the Salmon Bites
  • 1 lb Salmon, skinless, cut into cubes
  • 1 tsp Garlic Powder
  • 1 tsp Smoked Paprika
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 cup Panko Breadcrumbs
  • 1 tbsp Olive Oil light spray recommended
For the Bang Bang Sauce
  • 1/2 cup Mayonnaise
  • 2 tbsp Sweet Chili Sauce
  • 1 tbsp Sriracha adjust to taste
  • 1 tbsp Honey optional
  • 1 tbsp Lime Juice
For the Bowl
  • 2 cups Cooked Jasmine Rice or Cauliflower Rice
  • 1 cup Purple Cabbage shredded
  • 1 medium Avocado sliced, optional
  • 1 cup Shredded Carrots
  • 1/4 cup Green Onions sliced
  • 1/4 cup Cilantro for garnish
  • 1 tbsp Sesame Seeds for garnish

Method
 

Cooking Steps
  1. Preheat your oven to 400°F (200°C) or air fryer to 390°F (200°C).
  2. Season the salmon cubes with garlic powder, smoked paprika, salt, and pepper.
  3. Coat salmon with panko breadcrumbs and lightly mist with olive oil.
  4. Arrange salmon bites on a baking sheet and bake for 12 minutes until golden brown.
  5. Whisk together mayonnaise, sweet chili sauce, sriracha, lime juice, and honey for the sauce.
  6. Assemble bowls with rice, cabbage, avocado, and salmon bites.
  7. Drizzle with Bang Bang sauce and garnish with green onions, cilantro, and sesame seeds.
