Ingredients
  

For the Flatbread
  • 2 cups All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Salt
  • 1 tablespoon Olive Oil
  • 3/4 cup Warm Water
For the BBQ Chicken Toppings
  • 2 cups Cooked Chicken, shredded Use rotisserie for convenience.
  • 1 cup BBQ Sauce Choose your favorite brand.
  • 1 cup Shredded Cheese Mozzarella or cheddar works well.
  • 1/2 cup Red Onion, thinly sliced Optional.
  • 1/4 cup Fresh Cilantro, chopped For garnish.

Method
 

Flatbread Preparation
  1. Preheat your oven to 475°F (245°C).
  2. In a mixing bowl, combine the flour, baking powder, and salt. Stir in the olive oil and warm water until a dough forms.
  3. Knead the dough for a few minutes until smooth, then let it rest for 10 minutes.
  4. Divide the dough into four equal pieces and roll each piece into a flat circle.
  5. Place the flatbreads on a baking sheet and bake for about 5-7 minutes until lightly golden.
Topping Assembly
  1. In a bowl, mix the shredded chicken with the BBQ sauce until well coated.
  2. Remove the flatbreads from the oven and top each with the BBQ chicken mixture, followed by the shredded cheese and red onion.
  3. Return the flatbreads to the oven and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
  4. Garnish with fresh cilantro before serving.
