  • 1 lb Chicken Tenders Shredded BBQ chicken can be a quick substitute.
  • 1 tbsp Olive Oil Can substitute with avocado oil.
  • 1 tbsp Chicken Rub Store-bought or homemade mix.
  • BBQ Sauce Any brand works; consider sugar-free for health.
For the Sweet Potatoes
  • 2 medium Sweet Potatoes Can substitute with cauliflower or radishes for lower carbs.
For the Coleslaw
  • 1 bag Coleslaw Cabbage Mix Pre-packaged for convenience; exclude dressing.
  • 1/2 cup Mayonnaise Can use Greek yogurt as a healthier alternative.
  • 2 tbsp Fresh Lemon Juice or Apple Cider Vinegar Lime juice is a good substitute.
  • 1-2 tbsp Sweetener Use Monkfruit, Coconut Sugar, or regular sugar to taste.

Method
 

Preparation Steps
  1. Preheat your air fryer to 380°F or oven to 400°F. Toss sweet potato cubes with olive oil, salt, and pepper until coated. Air fry for about 15 minutes or roast for 25-30 minutes until tender.
  2. Season chicken tenders with olive oil and chicken rub. Air fry at 400°F for 4 minutes. Brush with BBQ sauce and cook for another 3-4 minutes or bake for 10+ minutes until cooked through.
  3. In a small bowl, combine mayonnaise, lemon juice or vinegar, and sweetener for dressing. In a medium bowl, add coleslaw mix and coat with dressing.
  4. Assemble your bowls with roasted sweet potatoes, BBQ chicken, and coleslaw. Add optional garnishes to taste.
