Preparation Steps
- Preheat your air fryer to 380°F or oven to 400°F. Toss sweet potato cubes with olive oil, salt, and pepper until coated. Air fry for about 15 minutes or roast for 25-30 minutes until tender.
- Season chicken tenders with olive oil and chicken rub. Air fry at 400°F for 4 minutes. Brush with BBQ sauce and cook for another 3-4 minutes or bake for 10+ minutes until cooked through.
- In a small bowl, combine mayonnaise, lemon juice or vinegar, and sweetener for dressing. In a medium bowl, add coleslaw mix and coat with dressing.
- Assemble your bowls with roasted sweet potatoes, BBQ chicken, and coleslaw. Add optional garnishes to taste.
