  • 2 cups Sweet Potatoes cut evenly
  • 2 cups Cooked Chicken shredded or diced, rotisserie recommended
  • 0.5 cups BBQ Sauce your favorite brand
  • 1 Red Onion diced
  • 1 cup Corn frozen or fresh
  • 1 cup Cheddar Cheese shredded, can use dairy-free option
  • 2 tablespoons Olive Oil or any cooking oil
  • to taste Salt
  • to taste Black Pepper
  • to taste Smoked Paprika
  • 2 Green Onions sliced, for garnish

Method
 

Step-by-Step Instructions
  1. Heat a large skillet over medium heat and add 2 tablespoons of olive oil. Allow to heat until shimmering.
  2. Add sweet potatoes to the skillet, stirring to coat in oil. Cook for 10-15 minutes until golden brown and tender.
  3. Stir in 1 diced red onion and 1 cup of corn, cooking for another 4-5 minutes until onions are translucent.
  4. Add 2 cups of cooked chicken and ½ cup BBQ sauce, stirring for about 3-4 minutes until heated through.
  5. Sprinkle 1 cup of shredded cheddar cheese on top, cover, and allow to melt on low heat for 2-3 minutes.
  6. Uncover and sprinkle sliced green onions on top. Serve immediately.
