- Heat a large skillet over medium heat and add 2 tablespoons of olive oil. Allow to heat until shimmering.
- Add sweet potatoes to the skillet, stirring to coat in oil. Cook for 10-15 minutes until golden brown and tender.
- Stir in 1 diced red onion and 1 cup of corn, cooking for another 4-5 minutes until onions are translucent.
- Add 2 cups of cooked chicken and ½ cup BBQ sauce, stirring for about 3-4 minutes until heated through.
- Sprinkle 1 cup of shredded cheddar cheese on top, cover, and allow to melt on low heat for 2-3 minutes.
- Uncover and sprinkle sliced green onions on top. Serve immediately.
