Ingredients

Method
 

Preparation Steps
  1. In a medium bowl, combine large peeled shrimp with olive oil and Cajun seasoning. Toss until evenly coated and marinate for at least 15 minutes.
  2. Bring a large pot of salted water to a boil, add fettuccini pasta, and cook according to package instructions for 8-10 minutes until al dente. Drain and set aside.
  3. In a large skillet, melt 2 tablespoons of butter over medium heat, add sliced mushrooms and minced shallots, and sauté for 5-7 minutes until tender. Remove and set aside.
  4. In the same skillet, add marinated shrimp and cook for 2-3 minutes on each side until pink and slightly charred. Remove and keep warm.
  5. Pour chicken broth into the skillet, bring to a gentle boil, and reduce for 3-4 minutes. Stir in sour cream and cornstarch mixture.
  6. Add sautéed vegetables and cooked shrimp back to the skillet. Toss in diced bell peppers and capers, season with salt and pepper, and mix well.
  7. Plate the Blackened Shrimp Stroganoff over cooked fettuccini, garnish with parsley or chives, and serve.
