Preparation Steps
- In a medium bowl, combine large peeled shrimp with olive oil and Cajun seasoning. Toss until evenly coated and marinate for at least 15 minutes.
- Bring a large pot of salted water to a boil, add fettuccini pasta, and cook according to package instructions for 8-10 minutes until al dente. Drain and set aside.
- In a large skillet, melt 2 tablespoons of butter over medium heat, add sliced mushrooms and minced shallots, and sauté for 5-7 minutes until tender. Remove and set aside.
- In the same skillet, add marinated shrimp and cook for 2-3 minutes on each side until pink and slightly charred. Remove and keep warm.
- Pour chicken broth into the skillet, bring to a gentle boil, and reduce for 3-4 minutes. Stir in sour cream and cornstarch mixture.
- Add sautéed vegetables and cooked shrimp back to the skillet. Toss in diced bell peppers and capers, season with salt and pepper, and mix well.
- Plate the Blackened Shrimp Stroganoff over cooked fettuccini, garnish with parsley or chives, and serve.
