Ingredients
  

For the Salad
  • 6 cups Mixed Salad Greens
  • 1 cup Fresh Blueberries
  • 1/2 cup Shelled Pistachios can substitute with toasted almonds
  • 1/2 cup Crumbled Feta Cheese goat cheese is an alternative
  • 1/4 cup Red Onion thinly sliced
For the Dressing
  • 1/4 cup Extra Virgin Olive Oil
  • 2 tablespoons Honey adjust to taste
  • 2 tablespoons Balsamic Vinegar
  • 1 tablespoon Dijon Mustard
  • to taste Salt & Black Pepper

Method
 

Preparation
  1. Rinse and dry mixed salad greens, then place in a salad bowl as a base.
  2. Rinse blueberries and chop pistachios into smaller pieces.
  3. Add blueberries and chopped pistachios to the bowl with greens, then sprinkle feta on top.
  4. Slice red onion into thin rings and toss into the salad.
  5. Whisk together olive oil, honey, balsamic vinegar, mustard, salt, and pepper in a bowl.
  6. Drizzle dressing over salad and gently toss to combine.
  7. Taste, adjust seasoning if necessary, and serve immediately or chill briefly.
