Preparation
- Melt ½ cup of butter over medium heat in a medium saucepan, stirring frequently until golden brown, about 5-7 minutes.
- Blanch the peaches by scoring the tops with a small 'X', boiling for 30 seconds, then plunging into icy water, peel and slice them.
- In a large bowl, mix flour, granulated sugar, brown sugar, baking powder, cinnamon, nutmeg, and salt. Add cooled brown butter, milk, and vanilla, then stir until just combined.
- Preheat oven to 350°F. Pour the batter into a greased baking dish and layer sliced peaches on top without stirring.
- Bake in the preheated oven for 40-45 minutes, until golden brown and bubbling at the edges.
- Let the cobbler cool for 10-15 minutes before serving warm, topped with vanilla ice cream.
