Preparation
  1. Melt ½ cup of butter over medium heat in a medium saucepan, stirring frequently until golden brown, about 5-7 minutes.
  2. Blanch the peaches by scoring the tops with a small 'X', boiling for 30 seconds, then plunging into icy water, peel and slice them.
  3. In a large bowl, mix flour, granulated sugar, brown sugar, baking powder, cinnamon, nutmeg, and salt. Add cooled brown butter, milk, and vanilla, then stir until just combined.
  4. Preheat oven to 350°F. Pour the batter into a greased baking dish and layer sliced peaches on top without stirring.
  5. Bake in the preheated oven for 40-45 minutes, until golden brown and bubbling at the edges.
  6. Let the cobbler cool for 10-15 minutes before serving warm, topped with vanilla ice cream.
