- In a large skillet, heat olive oil and butter over medium heat. Add sliced onions, sugar, salt, and black pepper. Cook for 5 minutes, stirring occasionally.
- Continue to cook the onions for 15–20 minutes until golden brown. Stir in balsamic vinegar and thyme, and cook for an additional 5 minutes.
- Preheat your oven to 400°F (200°C). Roll out the puff pastry and cut into rectangles measuring approximately 3x4 inches.
- Spread the caramelized onions onto each pastry rectangle, leaving a ½-inch border.
- Crumble goat cheese over the onions on each tart. Sprinkle with additional thyme if desired.
- Bake for 15–20 minutes until the pastry is golden brown and puffed.
- Allow the tarts to cool for about 5 minutes on a wire rack before serving.
