  • 1/2 teaspoon Salt sea salt preferred
  • 1 pinch Black Pepper or cayenne
  • 1 tablespoon Balsamic Vinegar or red wine vinegar
  • 1 teaspoon Thyme fresh preferred
  • 4 ounces Goat Cheese or feta as an alternative
For Optional Toppings
  • 1 tablespoon Additional Thyme for garnish
  • 1 tablespoon Honey drizzle before baking
  • 1 cup Figs or Roasted Red Peppers for additional flavors

Method
 

Step-by-Step Instructions
  1. In a large skillet, heat olive oil and butter over medium heat. Add sliced onions, sugar, salt, and black pepper. Cook for 5 minutes, stirring occasionally.
  2. Continue to cook the onions for 15–20 minutes until golden brown. Stir in balsamic vinegar and thyme, and cook for an additional 5 minutes.
  3. Preheat your oven to 400°F (200°C). Roll out the puff pastry and cut into rectangles measuring approximately 3x4 inches.
  4. Spread the caramelized onions onto each pastry rectangle, leaving a ½-inch border.
  5. Crumble goat cheese over the onions on each tart. Sprinkle with additional thyme if desired.
  6. Bake for 15–20 minutes until the pastry is golden brown and puffed.
  7. Allow the tarts to cool for about 5 minutes on a wire rack before serving.
