Step-by-Step Instructions
  1. Prepare Chicken: Pat chicken thighs dry, season with salt, pepper, allspice, and paprika. Let sit for 10 minutes while heating oil.
  2. Sear Chicken: Heat olive oil in a skillet, sear chicken skin-side down for 5-6 minutes until golden brown, then flip and sear for 2-3 minutes. Remove and set aside.
  3. Sauté Vegetables: In the same skillet, sauté garlic, scallions, and bell peppers for 2-3 minutes until fragrant.
  4. Cook Rice: Add rice, coconut milk, broth, thyme, and a pinch of salt. Stir and simmer until bubbling.
  5. Simmer: Nestle chicken back in, cover, and simmer for 20-25 minutes until rice is tender and liquid is absorbed.
  6. Crisp Chicken Skin: Uncover, increase heat for 5 minutes until chicken skin is crispy.
  7. Garnish and Serve: Remove from heat, garnish with scallions, and serve hot.
