  • 4 tablespoons melted butter
  • 1 tablespoon Cajun seasoning adjust quantity to taste

For the Breading
  • 1 cup panko breadcrumbs consider gluten-free
  • 1/2 cup grated Parmesan cheese nutritional yeast for dairy-free
For the Linguine and Sauce
  • 12 ounces linguine gluten-free option available
  • 1/2 cup heavy cream half-and-half can be used
  • 4 cloves garlic minced or chopped
  • 1 small red onion or shallot, chopped
  • 1 cup chopped tomatoes canned works well
  • 1/2 cup Pinot Grigio chicken broth as non-alcoholic substitute
  • 2 tablespoons lemon juice freshly squeezed
  • 1 whole lemon zest to amplify flavor
For Frying
  • 1/4 cup vegetable or canola oil
  • 2 tablespoons butter optional

Method
 

Preparation Steps
  1. Start by tossing the shrimp in a bowl with melted butter, Cajun seasoning, and lemon pepper. Allow to marinate for about 10 minutes.
  2. In a shallow dish, pour in panko breadcrumbs and season them. Coat each marinated shrimp with panko.
  3. Bring a large pot of salted water to a boil. Cook linguine according to package directions until al dente, about 8-10 minutes.
  4. Heat oil in a skillet and fry the breaded shrimp until golden brown, about 2-3 minutes per side.
  5. Sauté chopped onion and garlic in the same skillet. Add Pinot Grigio to deglaze and reduce.
  6. Stir in heavy cream, Parmesan cheese, Cajun seasoning, lemon juice, and zest. Mix until creamy.
  7. Combine the drained linguine and cooked shrimp with the sauce, toss to coat.
  8. Garnish with parsley and chopped tomatoes. Serve immediately.
