Preparation Steps
  1. Preheat your oven to 400°F (200°C).
  2. Scrub the russet potatoes under running water. Poke holes in each potato to allow steam to escape. Rub with olive oil, salt, and pepper.
  3. Bake the prepared potatoes for 45-60 minutes until tender and fluffy inside, with crispy skin.
  4. While the potatoes bake, cook the ground beef in a skillet over medium-high heat. Drain fat and stir in taco seasoning, simmer for 5 minutes.
  5. Once baked, remove potatoes and fluff the insides with a fork after slicing lengthwise.
  6. Fill each potato with seasoned beef and top with cheddar cheese. Return to the oven for 10-15 minutes until cheese is melted.
  7. Add your favorite toppings like sour cream, green onions, diced tomatoes, olives, and cilantro before serving.
