Preparation Steps
- Preheat your oven to 400°F (200°C).
- Scrub the russet potatoes under running water. Poke holes in each potato to allow steam to escape. Rub with olive oil, salt, and pepper.
- Bake the prepared potatoes for 45-60 minutes until tender and fluffy inside, with crispy skin.
- While the potatoes bake, cook the ground beef in a skillet over medium-high heat. Drain fat and stir in taco seasoning, simmer for 5 minutes.
- Once baked, remove potatoes and fluff the insides with a fork after slicing lengthwise.
- Fill each potato with seasoned beef and top with cheddar cheese. Return to the oven for 10-15 minutes until cheese is melted.
- Add your favorite toppings like sour cream, green onions, diced tomatoes, olives, and cilantro before serving.
