Ingredients
  

For the Shrimp
  • 1 pound Shrimp, peeled and deveined
  • 1/4 cup Cilantro, chopped Reserve half for slaw
  • 2 tablespoons Lime Juice Fresh lime is best
  • 1 tablespoon Lime Zest
  • 2 tablespoons Olive Oil Can substitute avocado oil
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Chili Powder Adjust for heat preference
  • 1/2 teaspoon Smoked Paprika
  • 1 teaspoon Honey Maple syrup can be used
For the Creamy Slaw
  • 2 cups Cabbage, shredded Green or red cabbage
  • 1/2 cup Greek Yogurt Can use sour cream or dairy-free
  • 1 tablespoon Lime Juice
For the Tacos
  • 8 pieces Tortillas Corn for gluten-free option
  • 1 whole Avocado, sliced Optional for serving

Method
 

Marinate and Prepare
  1. In a mixing bowl, whisk together salt, black pepper, smoked paprika, garlic powder, chili powder, olive oil, lime zest, lime juice, honey, and half the chopped cilantro. Add the shrimp and let marinate for 10-15 minutes.
  2. Combine cabbage, remaining cilantro, Greek yogurt, and lime juice in another bowl. Mix until cabbage is coated. Set aside.
Cooking and Assembling
  1. Heat a skillet over medium-high heat with butter or olive oil. Add marinated shrimp; cook 2-3 minutes per side until pink and opaque.
  2. Warm tortillas in the same skillet for about 30 seconds per side. Keep warm.
  3. On a tortilla, place cooked shrimp, top with creamy slaw, and add avocado if desired. Serve immediately with lime wedges.
