- In a large skillet over medium heat, combine the drained sliced peaches, melted unsalted butter, brown sugar, ground cinnamon, vanilla extract, and lemon juice. Stir gently to mix all the ingredients well, allowing the mixture to simmer for 5–7 minutes.
- Once the peach mixture has thickened, pour it into a greased 9x13 inch baking dish. Spread it evenly across the bottom using a spatula.
- Open the package of cinnamon rolls and cut each roll into quarters. Arrange these pieces over the peach mixture in the baking dish, pressing them down gently.
- Sprinkle the chopped pecans evenly over the cinnamon roll pieces. Dust with additional ground cinnamon.
- Preheat your oven to 350°F (175°C) and bake the assembled cobbler for 25–30 minutes.
- Once baked, remove the cobbler from the oven and immediately drizzle the included cream cheese icing over the warm topping.
