Cereal Milk Preparation
- In a bowl, combine 2 cups of milk with 1 cup of Cinnamon Toast Crunch cereal. Allow it to steep for 20-25 minutes, stirring occasionally. Once infused, strain the mixture through a fine mesh sieve, discarding the cereal, and set the flavored milk aside for later use.
Cake Layers
- Preheat your oven to 350°F (175°C) and grease three 6-inch cake pans with butter, then dust them with flour to prevent sticking. In a large mixing bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking powder, ½ teaspoon of salt, and 2 teaspoons of ground cinnamon. In a separate bowl, beat together ½ cup of unsalted butter and 1 cup of granulated sugar until fluffy. Incorporate 2 large eggs and 2 teaspoons of vanilla extract, mixing well, before alternating between the flour mixture and 1 cup of cereal milk, starting and ending with flour.
Baking the Layers
- Pour the batter evenly into the prepared cake pans and bake in the preheated oven for 30-35 minutes. Allow the cakes to cool in the pans for about 10 minutes before gently transferring them to wire racks to cool completely.
Crumble Preparation
- Preheat your oven to 300°F (150°C) and in a bowl, combine 1 cup of crushed Cinnamon Toast Crunch with ¼ cup of flour and 2 tablespoons of vegetable oil. Mix until evenly combined. Spread the mixture on a parchment-lined baking sheet and bake for 15 minutes, watching carefully until it’s golden and crispy. Let it cool completely before using it in the cake assembly.
Frosting Preparation
- In a mixing bowl, beat together ½ cup of softened cream cheese and ½ cup of unsalted butter until smooth and creamy. Gradually add 3-4 cups of powdered sugar, beating well until fluffy. Stir in 1 teaspoon of clear vanilla extract and a pinch of salt to balance the sweetness. The cream cheese frosting is ready when it’s light and airy.
Assembly
- To assemble your cake, place the first layer on a serving stand. Brush it generously with some of the reserved cereal milk and spread a layer of cream cheese frosting on top. Sprinkle a generous amount of the crunchy crumble over the frosting, then repeat with the second layer. Once all layers are stacked, frost the top and sides of the cake, smoothing it out evenly. Press additional crushed Cinnamon Toast Crunch onto the frosted sides for a fun finish.
