  1. Preheat your oven to 350°F (175°C) and prepare your baking equipment by greasing and flouring an 8 x 4-inch loaf pan.
  2. Mash enough ripe bananas to yield 1⅓ cups, about four small bananas.
  3. In a separate bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking soda, ½ teaspoon of salt, and ½ teaspoon of cinnamon.
  4. Cream together ½ cup of softened unsalted butter, ½ cup of brown sugar, and ¼ cup of granulated sugar until fluffy.
  5. Add 2 large room-temperature eggs one at a time to the creamed mixture, and stir in 1 teaspoon of vanilla extract and the mashed bananas.
  6. Gradually add the dry mixture to the banana mixture, stirring gently until just combined.
  7. Pour the banana bread batter into the prepared loaf pan and smooth the top.
  8. Bake for 45 to 60 minutes, checking at the 45-minute mark with a toothpick for doneness.
  9. Let the banana bread cool in the pan for about 5 minutes, then transfer to a wire rack to cool completely.
