- Prepare the Baking Dish: Line a 9x9 inch baking dish with parchment paper.
- Spread the Nuts: Evenly spread 1 cup of chopped pecans or almonds at the bottom of the prepared baking dish.
- Combine Ingredients in a Pot: In a medium-sized pot, combine 1 cup of butter, 1 cup of granulated sugar, 1/4 cup of water, and 1/2 teaspoon of salt.
- Heat to Hard Crack Stage: Cook the mixture over medium heat until it reaches the hard crack stage at 300°F.
- Add Vanilla and Pour: Stir in 1 teaspoon of vanilla extract and immediately pour over the nuts.
- Sprinkle the Chocolate Chips: After pouring, let the toffee cool for about 2 minutes and sprinkle chocolate chips over the hot caramel.
- Melt and Swirl the Chocolate: Cover the baking dish and let it sit for about 4 minutes to melt the chocolate.
- Optional Toppings: Sprinkle chopped pecans and/or flaked sea salt on top of the melted chocolate.
- Cool Completely: Allow the toffee to cool completely for about 4 hours.
- Cut into Pieces: Once set, lift the toffee out of the pan and cut into bite-sized pieces.
