Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 12-cup muffin tin with olive oil or non-stick spray.
  2. In a large mixing bowl, crack open the large eggs and whisk them vigorously until well combined and slightly frothy.
  3. Add the cottage cheese to your egg mixture and blend until smooth.
  4. Stir in the shredded cheddar cheese, chopped spinach, red bell pepper, garlic powder, salt, black pepper, and onion powder. Mix well.
  5. Dissolve the baking powder in a small amount of water and gently fold it into your batter until fully incorporated.
