  • 1 teaspoon Vanilla Extract Eyeball for convenience.
Optional Toppings
  • 1 cup Whipped Cream Homemade or store-bought.
  • 2 scoops Vanilla Ice Cream Pair alongside.

Directions
  1. Preheat your oven to 350°F (180°C) and grease a 9-inch round cake pan.
  2. Cream softened butter and sugar until light and fluffy, about 3-5 minutes.
  3. Add eggs one by one, mixing until just combined.
  4. Stir in orange zest, orange juice, and vanilla extract until well combined.
  5. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to wet ingredients, mixing gently.
  6. Fold in cranberries gently to preserve their shape.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 45-50 minutes, or until a toothpick comes out clean.
  9. Cool in the pan for 10-15 minutes, then transfer to a cooling rack.
