Instructions
  1. In a stand mixer, add a cold brick of cream cheese and beat on medium speed until smooth and creamy, about 2–3 minutes. Gradually fold in the chopped dried cranberries and sliced green onions, mixing until evenly dispersed.
  2. Scrape the mixture onto plastic wrap. Shape into a tight ball or log, ensuring a smooth outer layer. Refrigerate for at least 30 minutes.
  3. While the cheese ball chills, mix together finely chopped pecans, additional chopped cranberries, and chopped green onions on a large plate.
  4. Remove the cheese ball from the refrigerator, unwrap, and roll in the prepared coating, pressing it onto the surface to adhere.
  5. Serve immediately on your favorite platter with assorted crackers, fresh vegetables, or baguette slices.
