Cooking Instructions
  1. Bring a large pot of salted water to a rolling boil over high heat. Add short pasta and cook according to package instructions until al dente, about 7-9 minutes. Drain the pasta, reserving about 1 cup of pasta water.
  2. In the same pot, melt 4 tablespoons of unsalted butter over medium heat until bubbly. Whisk in 1/4 cup of all-purpose flour, cooking for about 1 minute to form a roux.
  3. Gradually whisk in 1 cup of heavy cream, stirring continuously to avoid lumps; cook until thickened, around 2-3 minutes.
  4. Remove the pot from heat and stir in 8 ounces of Boursin cheese and 1 cup of grated white cheddar cheese until melted and smooth. Adjust thickness with reserved pasta water or a splash of milk if needed.
  5. Fold the cooked pasta into the cheese sauce, mixing gently to coat each piece in the creamy sauce.
  6. In a skillet, melt 2 tablespoons of butter over medium heat. Add 1/2 cup of breadcrumbs and toast until golden brown, about 3-4 minutes.
  7. Transfer Boursin Mac and Cheese to a serving dish, top with toasted breadcrumbs, and serve hot.
