- Preheat your oven to 400°F (200°C) and lightly grease a 9x13-inch baking dish.
- Cut the chicken breasts in half horizontally to create thin cutlets and pound them for even thickness.
- Mix olive oil, minced garlic, Italian seasoning, salt, and black pepper in a bowl, and marinate the chicken for 15 to 30 minutes.
- Sauté the fresh spinach in olive oil over medium heat for 2 to 3 minutes until wilted.
- Beat the cream cheese until smooth, then fold in the wilted spinach and ½ cup mozzarella cheese.
