Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and lightly grease a 9x13-inch baking dish.
  2. Cut the chicken breasts in half horizontally to create thin cutlets and pound them for even thickness.
  3. Mix olive oil, minced garlic, Italian seasoning, salt, and black pepper in a bowl, and marinate the chicken for 15 to 30 minutes.
  4. Sauté the fresh spinach in olive oil over medium heat for 2 to 3 minutes until wilted.
  5. Beat the cream cheese until smooth, then fold in the wilted spinach and ½ cup mozzarella cheese.
  6. Optionally sear the marinated chicken cutlets in a hot pan for 1 to 2 minutes per side, then arrange in the baking dish.
