Step-by-Step Instructions
  1. Sauté the Aromatics: In a large skillet over medium heat, add olive oil. Once hot, toss in diced yellow onion and minced garlic, sautéing for about 5 minutes until fragrant and translucent.
  2. Add Sun-Dried Tomatoes and Seasoning: Stir in chopped sun-dried tomatoes, tomato paste, and Italian seasoning. Sprinkle in red chili flakes and salt to taste, sautéing for an additional 3 minutes.
  3. Create the Creamy Sauce: Pour in vegetable broth and coconut milk, stirring well. Allow to come to a gentle simmer over medium heat, noticing the sauce thickening.
  4. Incorporate the Chickpeas: Drain and rinse chickpeas, adding them to the skillet. Fold gently into the sauce and cover. Cook for an additional 2-3 minutes.
  5. Add Fresh Greens: Once heated, fold in fresh spinach or basil until wilted.
