For the Vegetables
  • 1 whole White Onion, diced Yellow or red onions can be used.

  • ½ cup Roasted Red Pepper, drained and sliced Fresh bell peppers can be substituted.
  • ½ cup Pepperoncini Peppers, drained Substitute with banana peppers for less spice.
For the Stock
  • ½ cup Chicken Stock Vegetable stock can be used as a vegetarian alternative.

Step-by-Step Instructions
  1. Prep Chicken: Pat the thinly sliced chicken dry and season both sides with sea salt and ground pepper.
  2. Sear Chicken: Heat 2 tablespoons of butter in a large skillet and sauté the seasoned chicken for about 8 minutes until golden brown.
  3. Sauté Aromatics: Lower the heat and sauté the diced onion and garlic until the onion is translucent.
  4. Deglaze & Reduce: Add chicken stock and roasted red pepper slices, bringing to a simmer, and reduce by half.
  5. Prepare Cream Sauce: Remove from heat and whisk in heavy cream and Parmesan cheese until smooth.
  6. Combine: Stir in Italian seasoning and pepperoncini peppers along with reserved chicken, heating through.
  7. Serve: Plate the dish and serve it over rice or pasta, garnished with extra Parmesan and pepperoncini.
