Step-by-Step Instructions
  1. Sauté aromatics by heating a large skillet over medium heat and adding olive oil. Add diced shallot and minced garlic, sauté for about 3 minutes.
  2. Cook tomatoes by adding cherry or grape tomatoes, cooking for approximately 10 minutes until soft and burst.
  3. Add peppers and spices, stirring in roasted red peppers, tomato paste, salt, basil, and Italian seasoning. Simmer for a couple of minutes.
  4. Incorporate cream by pouring in heavy cream and stirring until gently simmering for about 2 to 3 minutes.
  5. Combine tortellini and spinach, adding cooked tortellini and chopped spinach and folding gently until spinach wilts.
