- Sauté aromatics by heating a large skillet over medium heat and adding olive oil. Add diced shallot and minced garlic, sauté for about 3 minutes.
- Cook tomatoes by adding cherry or grape tomatoes, cooking for approximately 10 minutes until soft and burst.
- Add peppers and spices, stirring in roasted red peppers, tomato paste, salt, basil, and Italian seasoning. Simmer for a couple of minutes.
- Incorporate cream by pouring in heavy cream and stirring until gently simmering for about 2 to 3 minutes.
- Combine tortellini and spinach, adding cooked tortellini and chopped spinach and folding gently until spinach wilts.
- Finish with cheese, adding grated Parmesan cheese and stirring until melted and creamy. Adjust seasoning if desired.
- Serve and garnish by transferring to plates, topping with remaining Parmesan, and adding fresh basil or a drizzle of olive oil.
