- Season 1 pound of raw shrimp with smoked paprika, Italian seasoning, salt, and black pepper. Set aside.
- In a large skillet, heat olive oil over medium-high heat. Add the seasoned shrimp and minced garlic. Cook for about 2 minutes per side until shrimp are opaque and slightly golden. Transfer cooked shrimp to a plate.
- In the same skillet, add sun-dried tomatoes and artichoke hearts. Sauté for approximately 1 minute.
- Stir in fresh spinach and cook until wilted, about 2 minutes.
