Preparation Steps
  1. Gather all your ingredients. Chop the green onions and crush the garlic cloves. Set aside.
  2. In a medium mixing bowl, combine sugar, sesame seeds, garlic, and green onions. Whisk in soy sauce, rice vinegar, chili oil, and sesame oil until smooth.
  3. Slice off ends of cucumbers. Use chopsticks to make diagonal cuts along the length for spiral shapes.
  4. Sprinkle salt over cucumber spirals and massage in. Let sit in colander for 8-10 minutes.
  5. Rinse cucumbers under cold water. Drain and transfer to a bowl. Pour dressing over and toss until coated.
