- Gather all your ingredients. Chop the green onions and crush the garlic cloves. Set aside.
- In a medium mixing bowl, combine sugar, sesame seeds, garlic, and green onions. Whisk in soy sauce, rice vinegar, chili oil, and sesame oil until smooth.
- Slice off ends of cucumbers. Use chopsticks to make diagonal cuts along the length for spiral shapes.
- Sprinkle salt over cucumber spirals and massage in. Let sit in colander for 8-10 minutes.
- Rinse cucumbers under cold water. Drain and transfer to a bowl. Pour dressing over and toss until coated.
