For the Blueberry Compote
  • 2 cups Fresh Blueberries choose ripe ones for maximum taste
  • 1/4 cup Sugar substitute with honey or maple syrup for a natural touch
  • 1 tablespoon Lemon Juice freshly squeezed is preferred
  • 2 sprigs Fresh Lemon Thyme optional but recommended
For the Sandwich
  • 4 slices Bread sourdough or rustic loaf recommended
  • 4 ounces White Cheddar Cheese medium to sharp variety recommended
  • 4 ounces Mozzarella Cheese whole milk for richness
  • 2 tablespoons Butter for grilling

Method
 

Compote Preparation
  1. In a medium saucepan over medium-high heat, combine fresh blueberries, sugar, lemon juice, and bundled lemon thyme. Stir occasionally and bring to a boil, then reduce the heat and let it simmer gently for about 20 minutes.
  2. Remove from heat when it coats the back of a spoon and let it cool while you prepare the sandwiches.
Sandwich Assembly
  1. Lay out slices of bread. Generously spread the cooled blueberry compote on one side of half the bread slices.
  2. Layer white cheddar and mozzarella cheese on top of the compote, then place the remaining bread slices on top.
Grilling
  1. Heat a non-stick skillet over medium heat and add butter. Once melted, place the sandwiches in the skillet.
  2. Grill for 2-3 minutes until golden brown, then flip and grill the other side.
Serving
  1. Remove from skillet, let rest for a minute, then slice in half. Sprinkle with flaky sea salt and garnish with fresh thyme.
