- Preheat your oven to 350°F (175°C). Scrub the potatoes under running water, cut into wedges, and dry them with a kitchen towel.
- Heat vegetable oil in a deep fryer or pot to 350°F.
- Fry potato wedges in batches for 4-5 minutes until golden brown. Drain on paper towels.
- Arrange fried wedges on a baking sheet and sprinkle with salt and pepper.
- Sprinkle cheddar cheese and half of the crumbled bacon over the wedges.
- Bake in the oven for 15 minutes, then add the remaining bacon and bake for another 5 minutes.
- Allow to cool slightly, then serve with your favorite dips.
