Ingredients
  

For the Eggplant
  • 2 medium Chinese Eggplants or one large Asian eggplant
  • 1/2 cup Cornstarch can substitute with rice flour
  • 1 teaspoon Salt
  • 1/2 teaspoon White/Black Pepper use preferred type
For the Glaze
  • 1 teaspoon Garlic Powder
  • 1/2 cup Neutral Oil (Canola/Veg Oil) for pan-frying
  • 1 tablespoon Sesame Oil
  • 4 cloves Garlic finely minced
  • 1 teaspoon Ginger freshly grated
  • 1/4 cup Soy Sauce use low sodium for healthier option
  • 1 tablespoon Dark Soy Sauce
  • 1 tablespoon Rice Vinegar
  • 1 tablespoon Brown Sugar/Honey
  • 1 tablespoon Cornstarch Slurry for thickening the glaze
For Garnish
  • 2 tablespoons Scallions chopped
  • 1 tablespoon Sesame Seeds
  • 1 teaspoon Chili Flakes optional
  • 2 tablespoons Cilantro optional

Method
 

Cooking Steps
  1. Wash the Chinese eggplants thoroughly and cut into 2.5-inch batons. Sprinkle with salt and let rest in a colander for 10 minutes.
  2. In a mixing bowl, combine cornstarch, garlic powder, salt, and pepper. Toss the dried eggplant in this mixture until evenly coated.
  3. Heat neutral oil in a skillet over medium-high heat. Add eggplant pieces in a single layer and fry for 3-4 minutes per side until golden brown and crisp.
  4. In a saucepan, warm sesame oil. Add minced garlic and grated ginger, sauté for 30 seconds. Stir in soy sauces, rice vinegar, and brown sugar, cooking for 2 minutes before adding cornstarch slurry.
  5. In a bowl, combine hot crispy eggplant with warm garlic soy glaze. Toss until coated and serve immediately garnished with scallions, sesame seeds, and chili flakes.
