- Wash the Chinese eggplants thoroughly and cut into 2.5-inch batons. Sprinkle with salt and let rest in a colander for 10 minutes.
- In a mixing bowl, combine cornstarch, garlic powder, salt, and pepper. Toss the dried eggplant in this mixture until evenly coated.
- Heat neutral oil in a skillet over medium-high heat. Add eggplant pieces in a single layer and fry for 3-4 minutes per side until golden brown and crisp.
- In a saucepan, warm sesame oil. Add minced garlic and grated ginger, sauté for 30 seconds. Stir in soy sauces, rice vinegar, and brown sugar, cooking for 2 minutes before adding cornstarch slurry.
- In a bowl, combine hot crispy eggplant with warm garlic soy glaze. Toss until coated and serve immediately garnished with scallions, sesame seeds, and chili flakes.
