  1. In a large mixing bowl, whisk together rice flour, cornstarch, sugar, soy sauce, eggs, minced garlic, grated ginger, salt, and toasted sesame oil until you achieve a smooth batter. Set aside for at least 10 minutes.
  2. Add the boneless, skinless chicken thighs to the batter, ensuring each piece is thoroughly coated. Cover and refrigerate for at least 4 hours or overnight.
  3. Make the spicy mayo by combining mayonnaise, chili paste, a splash of water, sugar, lemon juice, and garlic paste in a separate bowl. Adjust spiciness as desired.
  4. In a deep pot or heavy-duty skillet, heat oil to 350°F (175°C). Monitor closely to prevent overheating.
  5. Fry the marinated chicken in batches for 4-5 minutes until golden brown and crispy, ensuring it reaches an internal temperature of 165°F (74°C).
  6. Remove the chicken, drain excess oil, and sprinkle with furikake while hot.
