Method
 

Directions

  2. In a large mixing bowl, combine halved Brussels sprouts and carrot batons with melted coconut oil, smoked paprika, garlic powder, ground coriander, salt, and black pepper. Toss to coat.
  3. Spread the vegetables in a single layer on the baking sheet and roast for 25 minutes, ensuring they are nicely charred and fork-tender.
  4. Remove from oven and immediately drizzle with the remaining coconut oil and maple syrup. Toss to coat the veggies in the glaze.
  5. Serve hot, optionally sprinkling with smoked paprika before serving.
