For the Shrimp Cakes
  • 1 pound Fresh Gulf or Pacific white shrimp Peeled and deveined
  • 1 cup Breadcrumbs Panko recommended for extra crunch
  • 1 large Egg Or flax egg for vegan option
  • 2 tablespoons Green Onions Finely chopped
  • 2 tablespoons Lemon Juice Fresh preferred
  • 1 tablespoon Lemon Zest Fresh preferred
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
For the Lemon Aioli
  • 1/2 cup Mayonnaise Greek yogurt as a lighter alternative
  • 1 clove Garlic Minced
  • 1 tablespoon Lemon Juice Fresh preferred
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper

Method
 

Preparation
  1. Peel and devein shrimp, chop into 1/4-inch pieces, and set aside.
  2. Combine chopped shrimp, breadcrumbs, egg, green onions, lemon juice, lemon zest, salt, and pepper in a mixing bowl. Mix gently.
  3. Form small patties about 1-inch thick and place on a parchment-lined baking sheet. Chill for 30 minutes.
  4. Heat olive oil in a skillet over medium heat.
  5. Cook shrimp patties for about 4 minutes on one side until golden brown, then flip and cook for another 4 minutes.
  6. Mix mayonnaise, minced garlic, lemon juice, salt, and pepper in a bowl to prepare the lemon aioli.
  7. Transfer shrimp cakes to a paper towel-lined plate. Serve with lemon aioli.
