Preparation
- Peel and devein shrimp, chop into 1/4-inch pieces, and set aside.
- Combine chopped shrimp, breadcrumbs, egg, green onions, lemon juice, lemon zest, salt, and pepper in a mixing bowl. Mix gently.
- Form small patties about 1-inch thick and place on a parchment-lined baking sheet. Chill for 30 minutes.
- Heat olive oil in a skillet over medium heat.
- Cook shrimp patties for about 4 minutes on one side until golden brown, then flip and cook for another 4 minutes.
- Mix mayonnaise, minced garlic, lemon juice, salt, and pepper in a bowl to prepare the lemon aioli.
- Transfer shrimp cakes to a paper towel-lined plate. Serve with lemon aioli.
