  1. Prepare Potatoes: Begin by washing 2 lbs of Yukon Gold or baby potatoes thoroughly. Cut them into 1-inch cubes and pat them dry.
  2. Season Potatoes: In a bowl, mix onion powder, garlic powder, salt, black pepper, and paprika with 2 tablespoons of olive oil. Toss the dried potato cubes to coat them evenly.
  3. Air Frying: Preheat air fryer to 400°F (200°C). Lightly coat the basket with olive oil, arrange potatoes in a single layer, and air fry for 18 minutes, shaking halfway through.
  4. Check for Doneness: After 18 minutes, check if potatoes are golden and crispy. If desired, air fry for another 2 minutes until they reach your preferred crispiness.
  5. Oven Baking (Alternative): Preheat oven to 425°F (220°C). Spread seasoned potato cubes on a foil-lined baking sheet and bake for 25-30 minutes until golden and crispy.
  6. Make Cilantro Sauce: In a saucepan, heat olive oil and sauté minced garlic. Stir in cayenne, cilantro, paprika, and lemon juice until well combined.
