  • 1 cup Cilantro omit for those who dislike cilantro
  • 1 cup Sour Cream or Greek Yogurt (optional) dairy-free option: coconut milk
  • 1 medium Avocado (optional) for garnish

Method
 

  1. Prepare Ingredients: Wash and thinly slice your chosen bell peppers and onion. Cut chicken into sizable chunks to absorb flavors.
  2. Combine & Layer: In the crockpot, layer the chicken, followed by the sliced vegetables, fajita seasoning, fire-roasted tomatoes, and chicken broth.
  3. Cook Thoroughly: Cover and set to low for 6-8 hours or high for 3-4 hours, avoiding excessive stirring.
  4. Finish & Serve: Shred the chicken, stir in lime juice, and garnish with cilantro, sour cream, and avocado.
  5. Adjust Consistency: If too thick, add more broth or water, then stir and warm through.
