  • 2 cups all-purpose flour Sifted
  • 2 cups granulated sugar
  • 3/4 cup cocoa powder Unsweetened
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup milk Whole or plant-based
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup boiling water This helps to enhance the cake's flavor
For the Frosting
  • 1 cup butter Softened
  • 3/4 cup cocoa powder Unsweetened
  • 5 cups powdered sugar
  • 1/2 cup milk More if needed
  • 1 teaspoon vanilla extract

Method
 

Baking the Cake
  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add milk, oil, eggs, and vanilla to the dry ingredients. Beat on medium speed for 2 minutes.
  4. Stir in boiling water until the batter is smooth.
  5. Pour the batter into the prepared pans and bake for 30-35 minutes, or until a toothpick comes out clean.
Frosting the Cake
  1. While the cakes are cooling, prepare the frosting by beating together softened butter, cocoa powder, and powdered sugar.
  2. Add milk and vanilla, beating until smooth and creamy.
  3. Once the cakes are completely cool, frost the top of one cake layer, place the second layer on top, and frost the top and sides.
