Preparation Steps
  1. Season the chicken pieces with salt, pepper, cumin, paprika, and turmeric, rubbing them into the skin.
  2. Heat olive oil in a large skillet over medium-high heat. Brown the chicken for 6-8 minutes until golden.
  3. Add chopped onions, minced garlic, and diced bell peppers to the skillet. Sauté for 3-4 minutes until softened.
  4. Stir in the uncooked long-grain rice, toasting for 1-2 minutes to absorb flavors.
  5. Pour in chicken broth and diced tomatoes. Let simmer before folding in frozen peas.
  6. Nestle browned chicken pieces into the rice mixture. Cover and simmer for 30-35 minutes on low heat.
  7. Remove from heat and let rest for 5 minutes. Garnish with fresh cilantro before serving.
