Method
 

Dough Preparation Steps
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the all-purpose flour and granulated sugar.
  3. In a separate bowl, blend together the ricotta cheese, large egg, vanilla extract, and lemon zest until creamy.
  4. Gradually add the dry flour mixture to the wet ingredients, stirring until a soft dough forms.
  5. Cover the dough with plastic wrap and allow it to rest for 30 minutes at room temperature.
  6. Line two baking sheets with parchment paper.
  7. Roll out the dough to about ¼ inch thick and cut into rectangles (approximately 2x3 inches).
Filling and Baking Steps
  1. In a mixing bowl, combine the ricotta, mini chocolate chips, and chopped pistachios.
  2. Take a rectangle of dough, place a spoonful of the filling, and fold over to create a pocket.
  3. Pinch the edges securely to seal.
  4. Place filled cookies on baking sheets and bake for 15-18 minutes, or until golden brown.
  5. Allow to cool for 5 minutes before dusting with powdered sugar.
