Method
 

Step-by-Step Instructions
  1. Rinse quinoa under cold water. In a saucepan, combine quinoa with water and bring to a boil. Reduce heat, cover, and simmer for 15 minutes.
  2. In a microwave-safe bowl, add chocolate chips and heat in intervals until smooth.
  3. Once quinoa is cool, combine with melted chocolate in a large mixing bowl.
  4. Line 8x8 inch pan with parchment paper and pour quinoa mixture in. Press down firmly.
  5. Refrigerate for at least 20 minutes until set.
  6. Cut into bars and store in an airtight container.
