- Rinse quinoa under cold water. In a saucepan, combine quinoa with water and bring to a boil. Reduce heat, cover, and simmer for 15 minutes.
- In a microwave-safe bowl, add chocolate chips and heat in intervals until smooth.
- Once quinoa is cool, combine with melted chocolate in a large mixing bowl.
- Line 8x8 inch pan with parchment paper and pour quinoa mixture in. Press down firmly.
- Refrigerate for at least 20 minutes until set.
- Cut into bars and store in an airtight container.
