Method
 

Step-by-Step Instructions
  1. Heat two tablespoons of olive oil in a large skillet over medium heat for about 2 minutes, or until the oil shimmers.
  2. Add one medium-diced onion to the skillet and sauté for 5 minutes until the onions turn translucent and slightly golden.
  3. Introduce 2 minced garlic cloves to the skillet and cook for 1 minute, stirring continuously.
  4. Stir in 1 cup of roasted red peppers, 1 cup of vegetable broth, 1 teaspoon of smoked paprika, 1 teaspoon of dried oregano, and salt and pepper to taste.
  5. Allow the mixture to simmer for about 10 minutes.
  6. Blend the sauce to your desired consistency using an immersion blender.
  7. Place 4 cod fillets into the skillet, spooning the sauce over each fillet. Cover and cook for 8-10 minutes.
  8. Remove the skillet from the heat and garnish with freshly chopped parsley.
