Step-by-Step Instructions for Easy Thai Chicken Curry Soup
  1. In a large pot, heat 2 tablespoons of olive oil over medium-high heat. Add 1 diced onion and sauté for about 5 minutes until translucent.
  2. Add 1 tablespoon of grated fresh ginger, 3 minced garlic cloves, and 2 tablespoons of Thai red curry paste. Stir for about 30 seconds until fragrant.
  3. Pour in 4 cups of chicken broth, 1 cup of water, and juice from 1 lime. Bring to a gentle boil for about 5 minutes.
  4. Add 6 ounces of uncooked rice noodles, cooking for about 4-6 minutes until tender.
  5. Mix in 1 can of coconut milk and 2 cups of shredded chicken. Let simmer for an additional 10 minutes.
  6. Before serving, stir in chopped fresh basil, cilantro, and 3 chopped scallions. Season with salt and pepper.
