Step-by-Step Instructions
  1. Season the chicken thighs or breasts with salt and black pepper, ensuring an even coating.
  2. In a medium bowl, whisk together honey, soy sauce, ketchup, minced garlic, and rice vinegar. Add grated ginger and red pepper flakes if using.
  3. Place the seasoned chicken in the slow cooker and pour the prepared sauce over it.
  4. Cover and cook on low for 4-5 hours or high for 2-3 hours, until the chicken is tender.
  5. To thicken the sauce, remove the chicken once cooked, mix cornstarch with water, and stir into the sauce. Simmer until thickened.
  6. Return the chicken to the slow cooker to absorb the thickened sauce, then serve with rice or noodles, garnished with sesame seeds and green onions.
