Ingredients
  

Chicken Marinade
  • 2 lbs Chicken Breasts Can use boneless, skinless chicken thighs for enhanced tenderness and flavor.
  • 3 cloves Garlic Use fresh minced garlic for authenticity.
  • 1/4 cup Fresh Lemon Juice Can replace with lime juice for a different citrus twist.
  • 1 medium Onion Use any onion variety; yellow onions are suitable.
  • 1/2 cup Water Essential for slow cooking.
  • 2 tblsp Olive Oil Substitute with avocado oil for a lighter option.
  • 2 tblsp Red Wine Vinegar Apple cider vinegar can be used if unavailable.
  • 2 tblsp Oregano Fresh oregano will impart a more robust taste than dried.
  • 1 tsp Allspice Optional but recommended for flavor complexity.
  • 1 tsp Lemon Pepper Can be omitted if unavailable.
Tzatziki Sauce
  • 1 cup Fat-Free Plain Greek Yogurt Full-fat yogurt can be used for a richer sauce.
  • 1/2 cup Grated Cucumber Squeeze out excess moisture for a thicker sauce.
  • 1/4 cup Chopped Fresh Parsley Fresh dill can be used for a more traditional tzatziki flavor.
  • 1 tsp Salt

Method
 

Preparation
  1. Start by spraying the inside of your slow cooker with non-stick cooking spray to prevent sticking. Place the chicken breasts at the bottom of the slow cooker.
  2. In a mixing bowl, combine minced garlic, fresh lemon juice, chopped onion, water, olive oil, red wine vinegar, oregano, allspice, and lemon pepper. Stir until well blended.
  3. Pour the marinade over the chicken in the slow cooker. Cover and set to HIGH for 3-4 hours or LOW for 6-8 hours until tender.
  4. Prepare the tzatziki sauce by combining yogurt, grated cucumber, minced garlic, parsley, and salt. Mix well and refrigerate for at least 1 hour.
  5. After the chicken is cooked, shred it in the slow cooker with two forks. Serve on warm pita bread and top with tzatziki and fresh toppings.

Notes
