Preparation
- Start by spraying the inside of your slow cooker with non-stick cooking spray to prevent sticking. Place the chicken breasts at the bottom of the slow cooker.
- In a mixing bowl, combine minced garlic, fresh lemon juice, chopped onion, water, olive oil, red wine vinegar, oregano, allspice, and lemon pepper. Stir until well blended.
- Pour the marinade over the chicken in the slow cooker. Cover and set to HIGH for 3-4 hours or LOW for 6-8 hours until tender.
- Prepare the tzatziki sauce by combining yogurt, grated cucumber, minced garlic, parsley, and salt. Mix well and refrigerate for at least 1 hour.
- After the chicken is cooked, shred it in the slow cooker with two forks. Serve on warm pita bread and top with tzatziki and fresh toppings.
