  • 1 packet Active Dry Yeast or instant yeast
  • 1 tablespoon Sugar optional
  • 3/4 cup Warm Water about 110°F
  • 2 cups All-Purpose Flour or whole wheat flour
  • 1 teaspoon Kosher Salt adjust if using regular salt
  • 2 tablespoons Olive Oil or vegetable oil
  • 1 tablespoon White Balsamic Vinegar or apple cider vinegar
For Topping
  • 4 oz Goat Cheese or feta cheese
  • 1 cup Fresh California Strawberries quartered
  • 1 teaspoon Coarsely Ground Black Pepper freshly ground
  • 1 tablespoon Extra Virgin Olive Oil for drizzling
  • 1 tablespoon Aged Balsamic Vinegar or regular balsamic
For Garnish
  • 1 cup Baby Arugula or spinach
  • 1 cup Frisée optional

Method
 

Steps
  1. In a small bowl, combine yeast, sugar, and warm water. Let it sit for 5-10 minutes until frothy.
  2. In a large bowl, mix flour, salt, olive oil, and vinegar. Add frothy yeast mixture and stir to form a shaggy dough.
  3. Knead dough on a floured surface for 5-7 minutes until smooth and elastic.
  4. Shape dough into a ball and place in a greased bowl. Cover and let rise in a warm place for about 1 hour.
  5. Preheat your oven to 475°F (245°C). Place a baking sheet or pizza stone inside.
  6. Punch down risen dough, divide in half, and roll out to desired thickness.
  7. Spread goat cheese over each pizza base, layer with strawberries, and sprinkle with crumbled goat cheese.
  8. Bake assembled pizzas for about 8-10 minutes until crust is golden and cheese bubbles.
  9. Remove from oven and drizzle with balsamic vinegars. Top with arugula and pepper.
  10. Slice and serve warm, optionally with salad or wine.
