Ingredients

For the Salad
  • 4 cups seedless watermelon provides sweetness and hydration
  • 2 cups cucumber adds crisp texture; choose English or Persian cucumbers
  • 1 cup feta cheese contributes tanginess and creaminess; goat cheese is an alternative
  • 1 handful fresh mint enhances aroma and freshness; basil can be a substitute
For the Dressing
  • 2 tablespoons olive oil adds richness
  • 1 lime juice offers acidity to balance sweetness

Equipment

  • sharp knife
  • large mixing bowl
  • Spatula or wooden spoon
  • Airtight Container

Method

Preparation
  1. Wash the watermelon and cucumber under cold water. Dice about 4 cups of seedless watermelon and 2 cups of cucumber into bite-sized pieces. Crumble 1 cup of feta cheese and finely chop a handful of fresh mint leaves.
  2. In a large mixing bowl, combine the diced watermelon, cucumber, and crumbled feta cheese. Gently fold the ingredients together, ensuring even distribution without squishing the watermelon.
  3. Drizzle approximately 2 tablespoons of olive oil and the juice of 1 lime over the ingredients. Lightly toss the salad to coat evenly.
  4. Add the chopped mint to the salad and toss gently to incorporate.
  5. Cover the salad with plastic wrap and refrigerate for at least 30 minutes before serving.
