  • 1 medium onion finely chopped
  • 1 medium bell pepper use red, yellow, or green for variety
For Serving
  • 1/4 cup fresh basil or oregano chopped
  • 1 cup extra marinara sauce for serving on the side

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and coat a baking dish with nonstick spray.
  2. In a large skillet over medium heat, cook your choice of ground turkey or beef for about 6-8 minutes until browned.
  3. Add finely chopped onion and bell pepper to the skillet and sauté for about 3-4 minutes until tender.
  4. Layer half the zucchini slices, half the meat mixture, and half the marinara sauce in the baking dish. Repeat the layering process.
  5. Sprinkle shredded mozzarella and cheddar cheese over the final layer of marinara sauce.
  6. Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes.
  7. Allow to cool for about 10 minutes before serving.
