- Dissolve raspberry jelly crystals in boiling water, stir until dissolved, then add cold water and refrigerate for 1-2 hours.
- Preheat oven to 180°C (350°F). Grease patty pans. Cream butter and sugar until fluffy, then add eggs and vanilla.
- Sift self-raising flour into butter mixture, alternating with milk, and gently fold until just combined.
- Spoon batter into prepared patty pans and fill about two-thirds full. Bake for 15 minutes or until golden brown.
- Cool the cakes in pans for a few minutes, then transfer to wire rack to cool completely.
- Trim the domes off the cooled sponge cakes to create an even surface.
