Step‑by‑Step Instructions
  1. Preheat your oven to 180°C (350°F).
  2. Wash and slice your ripe plums into thin strips.
  3. Melt the unsalted butter in a small saucepan over low heat and let it cool slightly.
  4. In a large mixing bowl, whisk together the eggs and caster sugar until frothy, about 2 minutes.
  5. Sift in the all-purpose flour and table salt, mixing until smooth and lump-free.
  6. Stir in the full cream milk, melted butter, and vanilla extract until well combined.
  7. Grease a ceramic or glass baking dish with a little butter.
  8. Pour the batter into the greased baking dish.
  9. Arrange the sliced plums on top of the batter.
  10. Bake for 25 to 35 minutes until golden brown and slightly jiggles in the center.
  11. Let cool for a few minutes before serving, optionally with ice cream or whipped cream.
