- In a large bowl or pot, combine chicken thighs, soy sauce, cane vinegar, crushed garlic, bay leaves, and whole black peppercorns. Marinate for at least 15 minutes, or refrigerate for up to 1 hour.
- Heat cooking oil in a large pot over medium-high heat. Remove the chicken from the marinade and add to the pot, browning on all sides for about 5–7 minutes.
- Pour the reserved marinade into the pot and bring to a boil. Reduce heat to low, cover, and simmer for 30–40 minutes.
- Remove the lid and increase heat to medium. Simmer uncovered for 10–15 minutes until the sauce thickens.
- Remove chicken from pot, shred it, and mix the cooked rice with some reduced adobo sauce. Press rice mixture into greased muffin tins, leaving space for chicken.
- Preheat oven to 375°F (190°C) and bake the cups for 15 minutes until golden.
- Allow cups to cool slightly before serving warm.
