  • 1/2 cup Cane Vinegar White vinegar works too

  • 2 pieces Bay Leaves Essential for flavor
  • 1 teaspoon Whole Black Peppercorns For mild heat
For the Rice Cups
  • 4 cups Cooked Rice Use jasmine or basmati
  • 2 tablespoons Cooking Oil Any neutral oil
  • 1 cup Vegetables (Optional) Diced bell peppers or peas

Method
 

Step-by-Step Instructions
  1. In a large bowl or pot, combine chicken thighs, soy sauce, cane vinegar, crushed garlic, bay leaves, and whole black peppercorns. Marinate for at least 15 minutes, or refrigerate for up to 1 hour.
  2. Heat cooking oil in a large pot over medium-high heat. Remove the chicken from the marinade and add to the pot, browning on all sides for about 5–7 minutes.
  3. Pour the reserved marinade into the pot and bring to a boil. Reduce heat to low, cover, and simmer for 30–40 minutes.
  4. Remove the lid and increase heat to medium. Simmer uncovered for 10–15 minutes until the sauce thickens.
  5. Remove chicken from pot, shred it, and mix the cooked rice with some reduced adobo sauce. Press rice mixture into greased muffin tins, leaving space for chicken.
  6. Preheat oven to 375°F (190°C) and bake the cups for 15 minutes until golden.
  7. Allow cups to cool slightly before serving warm.
